I love this picture of Jim Fish, owner and proprietor of Anasazi Fields Winery. An enviornmental portrait is supposed to show the individual, enhanced by his natural habitat...relating him to his habitat. In Jim's photo, isn't it obvious immediately that he is at least "in" to wines...if not a winemaker? An environmental portrait should reflect the charater of the subject. Also, the nature of the subject should be more revealed in such an image. This photo of Jim does just that. The pose suggests a strong character, a person "doing his own thing", and that is very, very true.
Jim is known as a "maverick" in his field (clearly no pun intended). Jim creates wines that are a blend of grape and up to 11% fruit juice, and wines that are entirely single fruit wines. Jim is VERY unique in that he creates fruit wines (plum, apricot, cherry, peach) that are totally dry...not slightly to strongly sweet like the norm...and hence his fruit wines are not even allowed in competitions! Here's a strange fact for you...fruit wines need to have sugar added to be able to ferment into dry, normal alcohol level wine!!! Grapes have the most sugar of any fruit around.
Jim's wines are different from what you may know already, but just ask Jim for which foods to pair them with, and you will end up with an exceptional meal!!!
